After last week’s minor freak-out over Weekend Recap, I’m happy to say I have finally returned to my senses. I’ve decided to post a weekend recap if I have one and if not it’s safe to say I watched a lot of Netflix between frequent napping and snacking.

This weekend was certainly NOT one of those weekends. As I mentioned on Friday, I had my first catering gig on Saturday. Despite a few bumps in the road it went off relatively smoothly and I think everyone was happy with the results.

I was in charge of breakfast, lunch and snacks so I thought I’d go through what I made. The majority of the food I made was healthy and it was fun to trick people who thought it wasn’t. But there was definitely a good balance of healthy food and indulgences. Don’t be surprised if you recognize some of the recipes or some appear on the blog in the coming weeks.

For Breakfast we had a DIY yogurt bar with fresh fruit and homemade Pecan Pie Granola. There were also croissants and healthy banana chocolate chip muffins (recipe to come).

The group is called The Eight & Change Collective. I’m going to attempt to explain what they do, but am 90% sure I will get it wrong. Essentially it is a group of young individuals who get together quarterly to discuss topics of interest to them and exercise their brains. Each person brings their own experience to the table to help further the group as a whole as well as on a personal level. The intelligence and ambition in the room was pretty impressive!

For lunch I made what I call “Jew Food”. Tuna Salad (adapted from this recipe), pesto egg salad, bagels, cream cheese & lox and a side salad.

The rest of the day was spent munching on these snacks. Decadent cookie butter peanut cookies and orange cranberry bars. Both were gone by the end of the day!

All-in-all it was a very positive experience. I got a taste for what it takes to cook for a large group and the amount of planning that goes into pulling off this kind of production. I’ve determined that for next time I need to put more effort into execution in terms of serving dishes and presentation. I’m usually not too caught up in that stuff but it definitely looks more professional.
