Caron Healthy Dorm Room Meal: TexMex Sweet Potato




In college, I loved making my own healthy meals using just the microwave. Last week, I uploaded the first of a three part series featuring dorm room recipes that are affordable, healthy and easy to make. The first recipe is a lunch or dinner meal idea using a sweet potato. It can easily be made vegan with a mini swap. Enjoy this meal if your cafeteria closes down lunch before you get back from class!

Serves 1, Total Time 10 minutes

  • Medium sized sweet potato
  • 1 tbsp black beans
  • 2 tbsp corn salsa
  • 1 tbsp chopped tomatoes
  • 1 tbsp Greek yogurt

Pierce sweet potato with a fork to break the skin. Really wash any remaining dirt off the potato. Put it in the microwave for 8-12 minutes depending on the size. While it’s cooking, combine 1 tbsp black beans, 2 tbsp of corn salsa bought from the store and 1 tablespoon of chopped tomatoes.

You can use canned tomatoes and black beans for convenience. Buy grape tomatoes and have as a snack during the week.

If you can’t find any corn salsa, just buy enough corn for a 1 tablespoon and combine the black beans, tomatoes and corn with a 1/2 teaspoon of cumin, a 1/2 teaspoon of coriander and 1 teaspoon of olive oil. I thought the jarred salsa would be easier for college students but if you have these spices available, go ahead and try this version!

Once the sweet potato is done cooking, slice it down the middle and fill with your tex mex mixture. Finish with a large dollop of plain greek yogurt (nonfat or 2%) on top! You can also use sour cream if you have it available. Enjoy.
